My employees and my family need to recharge our batteries.

Our Waterville location Cocina de Carlos at Smedlap's Smithy -Waterville is OPEN regular hours today.
For years, Cinco de Mayo was a day of great stress and even panic, thinking about how to "attract" and "satisfy" all the people who want to celebrate that day in a Mexican restaurant like ours.
Over the years, I learned that I had to change this mentality for the good of my family, my employees, and the comfort of my regular customers.
A few years ago, I stopped doing many of the "normal" things in a Mexican restaurant for this day and tried to focus on three things:
1. With our customers: Ensuring they find a space to enjoy the day, relax, and receive quality service like any other day. I learned that it's better to say "I'm sorry, but we're very busy and you need to wait" than to "try to exceed our capacity."
2. With my employees, try to enjoy the experience and erase the image of a nightmare from their minds. Try to prepare well for the occasion and avoid overbooking catering arrangements, as well as not change normal operating hours.
3. For me and my family, enjoy the occasion as much as possible.
At the end of the night, I think the objectives were met. I did have to turn down several reservations, but the wait was reasonable. I received no complaints all day, and although some guests had a few extra tequilas, I didn't have any problems with anyone.
It fills me with joy and I feel very blessed to see the result.
